TL;DR Version: Due to Ed's unique canon situation, his development within Purg was actually quite similar to those he would have taken following his own timeline. Not only does the FMA canon deal with a portal to another world, I think the changes that Ed endured in Purg quieted him, almost in the same way as Conqueror of Shamballa. He was taken away from his homeworld, never knowing what happened to Al - and it was a while before he saw his brother again, which made him sort of distant from most people and resigned to being stuck there.
Having been given the general store changed things though, just as in the movie Ed realizes that the brothers have to live for more than just the two of them. After taking over the general store - and then Al joining him - Ed was more involved with all people of Purg. As part of the job of the general store was making welcome baskets for the new members and greeting them at the temple upon arrival, Ed started to branch out more and worry about the well being of the general public instead of just his close friends, making him strikingly similar to an end of movie-verse Ed without the canon update.
I think it might also be important to note that Ed's become accustomed to other characters coming and going so he's learned that just because he might recognize someone that doesn't mean he expects them to recognize him. So, even though he might recognize cross-canon CR, he would know enough ICly not to assume that they have any idea who he is. It also gives him the benefit of being able to recognize manga only canonmates (such as Miles, or General Armstrong) where he doesn't actually know them in canon, being from the original anime. This is also something that Edward would have experienced, in a way, in canon because on the other side of the Gate people looked identical to those he knew back home. Meaning Ed had to adjust to recognizing complete strangers who wouldn't know him at all and responding to them in kind.
Like in canon, Ed had to learn to fight alongside those that he'd originally consider his enemies. He struggled with anything from floods, famine, boiling temperatures, the risk of freezing to death and regular monsters. Teamwork as a method to succeed was a big theme where he came from, both in Purg and in Lang. The experience opened Ed's eyes to possibilities beyond his wildest dreams, living side by side with homunculi that on his own world had tried to kill him. Lessons were learned about cooperating with the enemy, as in some cases people were divided into teams and pitted against each other.
The most outlandish thing about his development over the years is most likely the fact that he's learned that some animals can just talk without being a chimera, science experiment, horrifying thing to think about. They can just naturally communicate, and he's come to accept that after much exposure to certain characters.
Although Ed openly scoffs at religion canon paints him as more of a naytheist, implication that he believes or once believed in God and simply refuses to acknowledge it (outside of claiming God must hate him personally) is evidenced throughout the series. For someone who professes vocal disbelief or opposition to God, he certainly puts a lot of blame on an entity he claims to be so irrelevant. This is important to note because, within the confines of Purg and Attollo, Edward was introduced face-to-face with gods and eventually worn down into believing who they were and what they were capable of.
In Riverview skeptics who had powerful beings from their own worlds that weren't gods tried to lead Edward back into disbelief and this is still something that he struggles with today.
To summarize, Ed's time in other games has mellowed him out and matured him in a similar way to being in Germany. He's not as quick to outbursts, although they do still exist when pushed, and he's overall more concerned for the "whole" of the world than just his own goals, whatever they may be at the time. He's also far more accepting of things he'd otherwise dig his heels in about as a teenager.
Zhautas Canon Update
Character Journal:
Summary of Update: In October 2017, Ed received and used a memory canister providing him with information from his world that covered the approximate two years from his original disappearance from Amestris to the moment he returned to Munich, towards the end of Conqueror Of Shamballa.
Due to increasing pressure from his brother, concern about Val - who had recently arrived in the Quarantine - and a number of other factors (including the realization that there was never any chance of going home for him) Ed continued to push himself harder, throwing himself into his work and avoiding dealing with things as is typical of him.
In December with the celebration of Hygge, he turned this attention to the people he cared about and enjoying the holiday. He finally stopped pushing himself so hard and started to improve with the 'found family' established in Riverview, inviting members of Floor Six to move into the home he'd been constructing in secret to house all of them.
This stability was shattered when Valeria vanished abruptly on his birthday, leaving him both unable to follow and unwilling to leave Al. Ed left the city for a week to work out a plan and make that plan a convincing one, gave Jason his notes so that he wouldn't be completely unaware of things when he returned and had his memories erased of Val's arrival and his brother's confession, only to come back missing the months prior since that incident including the two years he gained from the memory canister.
Between the canon update, memory-erasing and conflicting game timeline period entering Zhautas, Ed's memories will start to cause him increased distress trying to differentiate the numerous timelines and which reality he actually lived. Some memories will be inconsistent or unclear due to the nature of Zenith's memory technology clashing with that of Riverview, that erased them in the first place.
He'll be faced with the reality that Val is definitely real, which means she was definitely here and is now missing. Which also means dealing with the renewed guilt that she vanished and he did nothing about it in his previous state of denial. Although this will make him more suspicious of Zenith and want to get more involved in all the conspiracy theories going around, having disappeared himself in the first place is going to make him wary of getting too actively into things, to prevent it from happening again. Ed will also feel closer to and be more comfortable around Jay after gaining memories of lost months they knew each other in Riverview.
Additionally, he'll have an easier time contributing to the program after having some of his memories erased, any scars he obtained in canon after his automail surgery but before his revival are gone thanks to his brother restoring his body, and since his birthday passed during this time period he'll now be 22-years-old.
This update will bring him up to the moment his memories were erased in Riverview on February 7th, 2018.

Episodes 48 - 51.
Shortly after killing Sloth, Envy arrives to take Al to Dante.
Ed and Izumi head to HQ to deal with Bradley, but he's not there.
There they meet the Tringhams who have valuable information about Al's location from their dad's research.
After an altercation with Archer, Ed leaves Izumi behind to go after Al - conveniently meeting up with Hawkeye and Mustang.
He learns for certain that Dante is the one behind everything, what Rose's role is in things and gets sent through the Gate to London in 1916 when Dante attempts to kill him.
There he learns the truth about his father and how alchemy actually works.
When the body Ed inhabits in London dies he's returned to Amestris through the Gate where he fights with Envy, resulting in his actual death.
Alphonse uses the stone to restore Ed's life since his soul is still "close enough" to the Gate to do so.
Ed wakes up and basically immediately sacrifices himself to restore Al instead because Elrics don't learn in this canon.
He winds up, once again, in other world and lives with Hohenheim doing research on rocket science, but now it's 1921 for no apparent reason.
Conqueror of Shamballa.
Fast forward to 1923, Ed is living with a guy named Alfons Heiderich, who just happens to look exactly like his brother. Although he was clearly involved in the rocket science research leading up to this movie he's suddenly lost all interest by the time the movie starts. Edward rescues a persecuted Romani woman named Noah from being sold and takes her in to live with him and Alfons, despite there being no god damn room.
Ed is also repeatedly shown to not be used to seeing people with the same faces as those he knew back home even though it's been two years and he deals with these people on the daily. After mistaking Fritz Lang for King Bradley, he agrees to help him hunt down a "dragon", which turns out to be Envy. Envy attacks Ed, the Thule Society intervenes, Ed asks too many questions and gets gassed in the face for being him.
The Thule Society use Envy and Hohenheim as catalysts to open a portal to Edward's world, believing it to be the utopia Shamballa after learning about it from Hohenheim. Edward breaks into the Thule Society headquarters and accidentally reopens the portal, returning a bunch of dead armored soldiers to Earth and allowing Al to slip through by attaching a portion of his soul to one of the suits of armor in Liore.
Ed mistakes Al's armored form for him being trapped in the suit of armor again, despite his attempt to restore his brother. Although Alphonse explains, Edward seems surprisingly unmoved by his brother's ability to move portions of soul around outside of his body.
Alphonse's armored form to briefly reunite with his brother before his soul returns to his body, increasing Edward's determination to return to his world.
Alphonse is guided by the homunculus Wrath to the underground city beneath Amestris' Central City to reopen the Gate of Alchemy. There, they are attacked by the homunculus Gluttony, who fights and mortally wounds Wrath. At Wrath's insistence, Alphonse transmutes and sacrifices the two homunculi to use as material to open the Gate. Meanwhile, in Munich, the Thule Society persuades Noah into guiding them on how to correctly open the Gate based on what she had learned from reading Edward's mind. Edward learns from Lang that the Thule Society plans to use the weapons from his world to help Adolf Hitler in his attempt to start a revolution, and heads to stop them. Hohenheim and Envy are both transmuted at the same time that Alphonse transmutes Gluttony and Wrath. With the Gate opened, Eckhart leads a fleet into the other world, where she gains the ability to use alchemy. However, she begins to go mad with power and fear of her new surroundings and launches an attack on Central City. Alfons launches Edward in a rocket-powered plane to return him to his world before being gunned down.
Edward arrives in his world with a crash landing.
He gets new automail limbs that Winry was carrying around just in case he happened to show up, despite not being properly fitted with ports because logic doesn't apply here.
The Amestris military manages to stop most of Eckhart's soldiers with the help of Roy Mustang.
Ed and Al face off against Eckhart, and Edward returns to Earth to seal the Gate on the other side, knowing he will be trapped there forever.

Ed's previous position of feeling confident that he'll return home was shattered as his perception of the multiverse expanded to include the concept of infinite various timelines. Instead of believing he'll go back and everything will be as it was (as described in previous worlds), Ed's come to believe that he vanished from his own timeline and his brother may very well be dead because of it. This has made him increasingly jaded, bitter and cynical after having moved away from that sort of mentality in previous games. He has lost a lot of his previous hope and optimism.
